Revised Compendium of Microbiological Criteria for Foods

Microbiological testing can play an important role in food safety management.

Centre Chief Scientist, Distinguished Professor Phil Bremer, wants members to take the time to familiarise themselves with the revised version of FSANZ’s Compendium of Microbiological Criteria for Food

The Compendium is a valuable resource for the food industry.  It is periodically updated to include new criteria as needed.

Says Phil, “An exciting feature of the July 2025 version is that it has added guidance for seafood and cell-cultured food.”

Microbiological testing can play an important role in food safety management providing the reason for testing is clear and the test applied is appropriate. 

A microbiological criterion provides limits that are considered appropriate to a food at a specific point of the food chain and states the actions to be taken when the criterion is not met.
